2013 I prepared a Ghanaian supper made of boiled yams and a goat meat sauce. I
dredged the meat in flour with seasoning salt and cayenne pepper and pan seared
it. Then I braised it in a garlicy,oniony tomato sauce seasoned with anchovies,smoked
whitefish and salted pollock. I also stewed fresh hand cut tomatoes,jalapeno
peppers,ginger and onions in the sauce the goat meat braising in. This meal was
so tasty and satisfying.

Fried Green Tomatoes
This was my first attempt at making these. So I used Simplyrecipes.com. They turned out alright.
INGREDIENTS
- 3 medium, firm green tomatoes
- Salt
- 1 cup all-purpose flour
- 1 Tbsp Cajun seasoning (optional)
- 1/2 cup milk or buttermilk
- 1 egg
- 1/3 cup cornmeal
- 1/2 cup fine dry bread crumbs
- 1/4 cup peanut oil or other vegetable oil
METHOD
1 Cut unpeeled tomatoes into 1/2 inch slices. Sprinkle slices with salt. Let tomato slices stand for 5 minutes. Meanwhile, place in separate shallow bowls: the flour and Cajun seasoning (if using), buttermilk and egg, and bread crumbs and cornmeal.
2 Heat the peanut oil in a skillet on medium heat. Beat the egg and the buttermilk together. Dip tomato slices in the flour-seasoning mix, then buttermilk-egg mixture, then the cornmeal-bread crumb mix. In the skillet, fry half of the coated tomato slices at a time, for 3-5 minutes on each side or until brown. Set the cooked tomatoes on paper towels to drain. These are fantastic with a little Tabasco sauce or remoulade.
Yield: Serves 4 as a side dish.

Blackberry Pie
I made this pie a few nights ago and did not follow the recipe to the letter. So, it looks more like cobbler but still tastes great. Good luck and best dishes on yours.

"This is a simple pie to make with amazing results. Fresh or frozen blackberries can be used."
INGREDIENTS:
4 cups fresh blackberries
1/2 cup white sugar
1/2 cup all-purpose flour
1 recipe pastry for a 9 inch double crust

2 tablespoons milk
1/4 cup white sugar

DIRECTIONS:
1. | Preheat oven to 425 degrees F (220 degrees C). |
2. | Combine 3 1/2 cups berries with the sugar and flour. Spoon the mixture into an unbaked pie shell. Spread the remaining 1/2 cup berries on top of the sweetened berries, and cover with the top crust. Seal and crimp the edges, and cut vents in the top crust for steam to escape. |
3. | Brush the top crust with milk, and sprinkle with 1/4 cup sugar. |
4. | Bake in the preheated oven for 15 minutes. Reduce the temperature of the oven to 375 degrees F (190 degrees C), and bake for an additional 20 to 25 minutes, or until the filling is bubbly and the crust is golden brown. Cool on wire rack. |

Savannah Diner to Open Spring 2016
I am seeking business contacts that can assist me with
opening a roadside diner, right off I-95 in Savannah, Georgia which offers traditional diner
comfort food as well multiple tasty special needs healthy dishes and an African
special dish of the day on the menu. I have done a bit of marketing research.
There are only three remaining black owned restaurants in Savannah. One of those is not even full service because
it is actually a fish market and a take-out only establishment at that. According to the marketing directory
publication, The Black pages, there are no black owned restaurants in Savannah,

First time today at the Savannah Whole Foods. The blackberry sorbet and the pineapple basil gelato was amazing. The service was on point. The prices on spices for the most part were really good. Wonderful variety of bulk foods available. I will certainly be a frequent customer.

JJ Virgin Diaries Diet Update: Plans Have Changed For A While
The start of the JJ Virgin diet has been postponed again for two reasons. Honestly, right now, my money is a little funny and my change is a kind of strange. So therefore, I cannot possibly hope to succeed if my grocery budget doesn't allow me to follow even the letter of the law of this diet, much less the spirit of it. Additionally, I need to finish reading The Virgin Diet: Drop 7 Foods, Lose 7 Pounds, Just 7 Days by J.J. Virgin and get the book My Virgin Diet Cookbook: : The Gluten-Free, Soy-Free, Egg-Free, Dairy-Free, Peanut-Free, Corn-Free and Sugar-Free Cookbook

In the meantime in between time I have not abandoned being proactive about addressing the need for getting a handle on my health and weight. My ex-husband told me about the 5:2 Fast Diet. Then I went online to get more information. From my limited understanding of this diet, the program requires the participant to fast on Mondays and Thursdays. The fast calls for the dieter to have scrambled eggs for breakfast, drink plenty of water through out the day, eat veggies only during the afternoon and evening and keep the caloric intake for the fasting days of Monday and Thursday to a five hundred maximum. I have not read The Fast Diet, the book by Dr Michael Mosley and Mimi Spencer nor the cookbook for this weight loss program. However, this diet is something I can handle following for now because it both simple and affordable.
Anywho, I started the Fast Diet last week and I am feeling better already. I must admit I didn't follow the diet to the letter. However I have an action plan in place this week to avoid the pitfalls of mindless eating. I'm not cooking anything I cannot eat on fasting days any more because even when I don't plan to eat something I'm cooking I always taste a little sample to make sure it is seasoned right or whatever the case may be. I am telling you, here with thunder thighs to prove it, sampling and tasting calories count too. Additionally, I have already prepared multiple,tasty,hearty and satisfying, low calorie vegatarian dishes to fill up on. My bottled water is chilled and I am about to make my scrambled egg. Wish me luck.
